Gluten-free brownies from a bag
These came from a groovy grocery store so they were in a medium-sized bag instead of a box but they are the same as your average boxed variety.

They were pretty good. Gluten-free products have really hit their stride. The brownies were moist and had that grainy mouthfeel that melts away once you taste it that I enjoy so much in other gluten-free baked desserts (Trader Joe’s Gluten-Free Crispy Chocolate Chip Cookies, for instance). I added chocolate chips in to the batter. That made it extra chocolatey and somewhat fudge-like. On the box, they have some variants of the main recipe: more cake-like, more fudge-y, dairy-free.

These brownies will not change your life unless you are gluten-free and are craving brownies and have not had brownies for many years. Or if you are making cannabis brownies. This mix would be perfect for that. 🍪

Irish Soda Bread

Irish Soda Bread, Ina Garten. This recipe is great because it’s super simple and unbelievably delicious. It doesn’t even involve yeast or rising or more than about 30 seconds of kneading, which is more like shaping it into a ball. The interior stays moist and fresh for days.

It calls for buttermilk, which we briefly had a carton of, but for loaves 3 and 4, I made the buttermilk from scratch, to which I added orange zest, called for in the recipe, but also lemon zest and grated fresh ginger. I also used whole wheat flour for the fourth loaf, and I definitely prefer this recipe with white flour.

I’ve never made it with currants. I’ve subbed in raisins, dried cranberries and (tonight) some candied ginger I chopped roughly. I resisted the temptation to put in chocolate chips because I think the candied ginger will be sweet enough but maybe someday. Hopefully the candied ginger will be a nice complement to the grated fresh ginger in the batter. I’m hoping it is kind of fruitcake-y because I love a lot of different kinds of fruitcake nowadays.

This bread will change your life. The Irish are brilliant.
